The way the math works out on this, the fire axe has the higher average damage per AP, along with higher variance, while the knife sacrifices average damage for slightly greater reliability. I really don't think the knife is worth the equipment slot. The only time it would be useful is if some zombie is down to single-digit HP and you absolutely need to bump him off before you AP out.
Example: a zombie has 2 HP. The knife is obviously better, because the average damage doesn't matter. It's all about the accuracy. Same with 4 HP: two hits with either weapon will get the job done, and the knife hits more often. Axe is better if your target has 3 HP left; it's one hit versus two with a negligible accuracy difference. If your target has 5 HP left and you're out of ammo, or he has a Flak jacket, stab then chop.
That knife will save you a few AP by making certain types of kills more efficient, but I'd take an extra FAK over a knife any day of the week.
